Chili-Rubbed Steaks and Pan Salsa
At 192 calories a serving, this steak dinner is a healthy option that still packs in the flavor.
Ingredients: 8 ounces 1/2-inch-thick steaks, such as rib-eye, trimmed of fat and cut into 2 portions; 1 teaspoon chili powder; 1/2 teaspoon kosher salt, divided; 1 teaspoon extra-virgin olive oil; 2 plum tomatoes, diced; 2 teaspoons lime juice; 1 tablespoon chopped fresh cilantro
1. On both sides of steak, sprinkle chili powder and 1/4 teaspoon salt. Over medium-heat, heat a medium-sized skillet. Cook the steaks 1 to 2 minutes per side, only turning them once for the perfect medium-rare. Once done cooking, place the steaks on a plate and cover with foil. Allow the steaks to rest while you make the salsa.
2. In the same pan you cooked the steaks, add tomatoes, lime juice and the remaining 1/4 teaspoon salt. Stirring often, cook the salsa for about three minutes or until the tomatoes soften. Remove the salsa from heat and stir in cilantro and any accumulated juices from the steaks. Top the steaks with salsa and serve.
